Kale Hummus



I'm not going to hide the fact that I am a huge hummus addict. The avocado flavoured one has to be one of my favourites however, I am always open to new ideas & forever searching for innovative tastes as it's always good to diversify. Here is a quick recipe for the perfect Kale flavoured home made hummus that you'll fall in love with. Kale has become a very popular cabbage among fitness lovers. It's rich in Vitamins A, C, E, K, B6, folate,thiamine and riboflavin. Let's not forget that it is also a great source of iron, potassium, calcium & phosphorus. Why not enjoy a tasty snack which is packed with all these goodies? You simply have to try it as the combination of flavours is exquisite, especially if you love garlic ;)

Key Ingredients
- Kale leaves (without the tough stems) - a cup
- A can of chickpeas - drain these
- White Tahin 1/2 cup
- Fresh lemon juice squeezed from 2 lemons
- 1 Garlic head
- 4 tbsp. Olive oil
- 1 tspn. sea salt 
- 2 tbsp. water
- Cayenne pepper for taste

Method
1. Put the Kale leaves in a pot with water & boil for 1 minute. Meanwhile, open up the garlic head, leaving the cloves in their skin. Add a little bit of pepper, salt & a drop of olive oil. Wrap in aluminium foil & roast for 15 minutes at 200 degrees in the oven. Save one or two fresh cloves for later use.
2. Drain the chickpeas & blend together with the rest of the ingredients from above. 
3. Peel & add the roasted garlic cloves to the mix as well as drained kale leaves.
4. Blend until the consistency is smooth. Some bits of the Kale may remain unblended. Dice the 2 cloves you saved earlier & add a pinch of cayenne pepper to taste. (Make sure to try before serving - some proportions may need adjusting) Voila!
